We are proud to announce that The Westin London City has been awarded the Gold Level certification by The PLEDGE™ on Food Waste, a globally recognised benchmark for food waste reduction and sustainable dining practices.
The PLEDGE™ is an international certification and benchmarking system designed for restaurants, hotel outlets, and canteens committed to cutting food waste, saving costs, and fostering a more responsible food ecosystem. Developed by food waste experts, academics, and F&B consultants, The PLEDGE™ provides a practical and measurable framework to tackle one of the hospitality industry’s most underestimated challenges — food waste.
This third-party audited standard operates entirely online and evaluates 95 criteria across seven key pillars: Policies and Action Plans, Staff Awareness, Food Waste Monitoring, Reinforcing SOPs at critical waste points, Guest Engagement, and Redistribution or Transformation of surplus food.
At Mosaic, the signature restaurant of The Westin London City, this achievement is a reflection of the team’s dedication to mindful, sustainable operations. Under the leadership of Head Chef Fabio De Paolis, Mosaic has secured an impressive 93% Gold Level rating, highlighting the restaurant’s focus on sustainability, innovation, and community impact.
Mosaic celebrates sustainably sourced international cuisine, crafted with locally produced ingredients that bring nutritious, globally inspired flavours to London’s financial district. The restaurant’s approach demonstrates that premium urban dining can thrive with environmental integrity at its core — blending refined guest experiences with responsible business practices.
This recognition reinforces The Westin London City’s ongoing commitment to wellbeing, balance, and sustainability — values deeply embedded within the brand’s ethos. Through initiatives like The PLEDGE™, the hotel continues to nurture both guests and the planet, proving that luxury and environmental consciousness can go hand in hand.
